GEOGRAPHY: Western Cape Province of South Africa – Constantia and surrounding areas. Cold wet winters with cool dry summers.
VINYARDS: East facing vineyards with a 5-wire Perold system. Extensive canopy-, yield- and crop management to ensure high quality grapes. Additional irrigation after veraizon if needed.
YIELD: 8 to 10 tons /ha
Balling at harvest: 23 to 24 degrees Balling
IN THE CELLAR: Grapes are destemmed and crushed, after which it is cold soaked for 12 to 18 hours prior to fermentation. Juice is fermented in stainless steel tanks at low temperatures to preserve primary flavours. No oak maturation.
TASTING NOTES: Prominent Tropical flavours complimented by nuances of gooseberry and minerality. Medium bodied, dry wine with a lingering well-balanced pallet.
Food Pairing: Pairs well with white meat and seafood dishes.
